Enzymes are proteins with catalytic functions which make life possible when synthesizing and degrading materials constitute the structure of the organisms. Due to the multiplicity of their applications, the use of enzymes has spread to almost all industries handling organic compounds –from the food industry to pharmaceutical or textile industries, only to name some. Therefore, enzymes turn into the fundamental element in said industries’ sustainable development, in addition of being of great importance for biotechnological development.
